Fish Tacos for the Win!
Oh, baby! I love a good man with fine cooking skills. This man is not only an amazing husband but a WONDERFUL father. I thought, why not feature him and his fantastic, fish tacos on Father's Day! I have to hand it to my hubs. He is really bringing his "A" game. He has perfected these fish tacos and I am loving them. Totally restaurant- style worthy.
This recipe will make about 4 fish tacos. I have broken down the recipe into two parts. First the slaw, then the marinade. To find the original recipe, click here.
Ingredients for slaw:
- 2 tbsp lime juice
- 1 tbsp honey
- 2 c shredded purple cabbage mixture in a bag OR we used this shredded power blend in a bag (brussel sprouts, cabbage, broccoli, carrots, kale) this time and it was great!
- 2 tbsp chopped fresh cilantro
- 1/4 c light mayo
To make the slaw, mix all ingredients together in a bowl. Season with salt and pepper.
Ingredients for the marinade:
- 1 lb or 1.5 lb cod and/or tilapia (your choice)
- 3 tbsp extra virgin olive oil
- 1/2 tsp cayenne pepper
- 2 tsp chili powder
- 1/2 tsp ground cumin
- juice of 1 lime
Additional ingredients:
- 1 tbsp vegetable oil ( for cooking fish)
- soft shell tortillas
- sour cream
- avocado
Mix ingredients together and let fish sit in the marinade for 15 minutes. Next, heat a tablespoon of vegetable oil in a large, non-stick pan over medium-high heat. Cook until fish is cooked through, 3-5 minutes per side, and flakes with a fork.
Lastly, take a soft tortilla shell and top with fish, slaw, and a dollop of sour cream. You can also add a slice of avocado. Mmmmmm I can taste them now. Perfecto!
